Ful - Middle Eastern Fava Bean Dish

Ful Medames (or just Ful) is a traditional Middle Eastern and North African dish made from stewed fava beans, usually seasoned with olive oil, garlic, lemon juice, and cumin. It's especially popular in Egypt, Sudan, Lebanon, and Syria. It’s often eaten for breakfast and served with bread.

Ingredients:
2 cans of ful (fava beans), drained
1 jalapeño, stem removed
1–2 garlic cloves, peeled
Juice of 1/4 lemon
Salt, to taste
1 medium tomato, finely chopped and de-seeded
A handful of fresh parsley, chopped
2 green onions, chopped
Olive oil, for drizzling
Instructions:
Make the Garlic-Jalapeño Paste: In a mortar and pestle, grind together the jalapeño, garlic cloves, lemon juice, and a pinch of salt until you form a smooth paste. Set aside.
Prepare the Ful: Drain the 2 cans of fava beans. If desired, remove the outer skins from the beans for a smoother texture.
Cook the Ful: Place the beans in a saucepan over low heat. Add a pinch of salt and begin to warm the beans gently. Using a wooden spoon or potato masher, mash some of the beans to create a thick, chunky consistency.
Add the Flavor: Stir in the garlic-jalapeño paste. Mix well to incorporate the flavors.
Add Fresh Ingredients: Stir in the chopped tomato, parsley, and green onions. Let everything heat through for a minute or two.
Finish with Olive Oil: Drizzle generously with olive oil just before serving.
Serve:Serve warm, at room temperature, or even cold — however you like it! Delicious with pita for breakfast or as part of a mezze spread.
