Auntie Eman’s Ultimate Shawarma Bowl
Chipotle and Cava, step aside — Auntie Eman is in the kitchen.
This shawarma bowl is the ultimate comfort-meets-flavor dish, packed with layers of crispy, creamy, tangy, and savory goodness. It’s her signature twist — inspired by Middle Eastern flavors but done in that unapologetically delicious Auntie Eman style. It’s not just a bowl… it’s a whole experience.
Ingredients:
For the Bowl Base:
White rice cooked with vermicelli (like Middle Eastern ruz bil sha’iriyeh)
For the Yogurt Tahini Sauce:
4 heaping tablespoons yogurt (Arabic, Desi, or Greek)
¼ cup tahini
1½ tablespoons lemon juice
1 garlic clove, grated
A small pinch of salt
Toppings & Layers:
Fried potatoes, cubed (crispy outside, soft inside)
Chopped tomatoes
Chopped pickles
A pinch of salt
Cooked corn kernels
Fried pita bread, cut into small cubes (crispy is key!)
Fresh parsley, finely chopped
For the Chicken:
Chicken thighs or breast, marinated in:
Shawarma seasoning
Lemon pepper seasoning
A little olive oil & lemon juice
Instructions
Cook the Rice: Start with your favorite white rice and cook it with lightly toasted vermicelli noodles in olive oil until golden. Fluff and set aside.
Make the Yogurt Tahini Sauce: In a bowl, whisk together the yogurt, tahini, lemon juice, and salt until smooth and creamy. Taste and adjust the tang or salt as needed.
Fry the Potatoes: Cube and fry potatoes until golden and crisp. Lightly salt them while hot.
Fry the Pita: Cut pita bread into small cubes and fry until crispy. This is the crunch factor you didn’t know you needed.
Grill the Chicken: Marinate chicken with shawarma seasoning, lemon pepper, a drizzle of olive oil, and a splash of lemon juice. Grill or pan-sear until cooked through, then chop into bite-size pieces.
Assemble the Bowl (The Auntie Eman Way):
Start with a base of rice with vermicelli.
Add a spoonful of the yogurt tahini mix.
Add a layer of crispy potatoes.
Sprinkle on chopped tomatoes.
Add chopped pickles and a pinch of salt.
Add a layer of corn.
Drizzle generously with more yogurt tahini sauce.
Top with fried pita cubes.
Add the chopped grilled chicken.
Finish with a handful of fresh parsley and a few more fried pita cubes for crunch.
