Ingredients:
1–2 medium beets
1/8 of an onion, thinly sliced
Salt, to taste
Olive oil, to taste
1 teaspoon vinegar
1 teaspoon lemon juice
Fresh parsley, chopped
Instructions:
Bring a pot of water to a boil. Peel the beets and add them to the pot. Boil for about 25–30 minutes until they’re fork-tender but not mushy. Sometimes, depending on the size of the beet, this might take up to 1 hour.
Once cooked, remove the beets from the water and let them cool. Slice them into wedges.
In a bowl, combine the sliced beets and thinly sliced onion.
Season with salt, drizzle with olive oil, and add the vinegar and lemon juice.
Sprinkle the chopped parsley on top and mix everything together.
Serve immediately or let it sit for a few minutes to allow the flavors to meld.
