Ingredients:
2 beets, peeled and chopped
4 cups water
3/4 cup sugar
1 teaspoon vinegar
Instructions:
In a pot, add the peeled and chopped beets with 4 cups of water. Bring to a boil, then reduce the heat and let them simmer for about 30–40 minutes, or until the beets are fork-tender.
Remove from heat and let the beets and water cool to room temperature.
Transfer the cooled beets and their cooking water to a blender. Add the sugar and vinegar.
Blend until smooth. For a thinner consistency, you can add a bit more water.
Chill in the refrigerator for at least an hour before serving. Enjoy cold!
