Auntie Eman's Crispy Homemade Falafel

Falafel is a deep-fried ball or patty made from ground chickpeas or fava beans, mixed with herbs, spices, and aromatics like garlic, onion, cumin, and cilantro (cilantro is the same as coriander). It has a crispy exterior and a soft, flavorful interior. Falafel is a popular dish in Middle Eastern cuisine and is often served in pita with tahini sauce, hummus, fresh vegetables, and pickles. It can also be enjoyed on its own as a snack or appetizer.


Auntie Eman’s Crispy Homemade Falafel


Light, crispy, and full of fresh herbs and warm spices, this falafel recipe is a must-try! Made from soaked chickpeas and packed with flavor, these golden bites are perfect on their own or tucked into a warm pita sandwich.


Ingredients

  • 1 (16 oz) bag dried chickpeas, soaked overnight

  • 1 bunch parsley, roughly chopped (about 3/4 cup)

  • 1 bunch cilantro, roughly chopped (about 3/4 cup)

  • ¼ onion

  • 4 garlic cloves

  • 2 tablespoons water

  • 1 tablespoon salt (or to taste)

  • 1 teaspoon cayenne pepper

  • ½ teaspoon turmeric

  • 1 teaspoon ground coriander

  • ½ teaspoon ground cumin

  • 1 tablespoon baking powder

  • Olive oil, for frying


Instructions

  1. Prepare the Falafel Mixture:

    • Drain the soaked chickpeas (do not use canned chickpeas).

    • In a large food processor, combine chickpeas, parsley, cilantro, onion, garlic, and water.

    • Blend for about 1 minute, then scrape down the sides with a silicone spatula and blend again.

    • The mixture should be grainy but hold together when pressed.

  2. Season the Mixture:

    • Transfer the mixture to a large bowl.

    • Add salt, cayenne pepper, turmeric, coriander, cumin, and baking powder.

    • Mix everything well until evenly combined.

  3. Shape the Falafel:

    • Form the mixture into small balls or patties. If you have a falafel scoop, use it for uniform shapes. Otherwise, shape with your hands.

    • Place the falafel on a tray and refrigerate for at least 20 minutes.

  4. Fry the Falafel:

    • Heat a generous amount of olive oil in a deep pan over medium heat.

    • Fry the falafel until golden brown and crispy on the outside.

    • Transfer to a plate lined with paper towels to drain excess oil.

  5. Serve and Enjoy:

    • Serve hot, either on their own or in a pita sandwich with tahini sauce, fresh veggies, and pickles.
